Jim Fuller is the Co-Founder and Chief Science Officer of Fable Food Co, an Australian company specializing in mushroom-based meat alternatives. Originally from Texas, USA, Jim began his career as a fine dining chef before pursuing studies in Chemical Engineering and Agricultural Science. He later became a mycologist with over 15 years of experience in cultivating culinary and medicinal mushrooms.
